[Scotty H]Banana Bread with Manuka honey and almonds

Scotty H has posted a new item, 'Banana Bread with Manuka honey and almonds'

 

You wouldn't believe it's gluten free! This loaf is moist and dense and has become a weekly staple in our house. It is great for morning or afternoon tea with a cup of peppermint tea. Try it with a little bit of almond butter – yum..

1 loaf
4-5 very ripe bananas
½ cup honey
¼ cup light olive oil
2 tsp vanilla extract
1 cup gluten free flour mix (2 parts brown rice flour, 1 part soy flour, 1 part tapioca flour)
1 cup buckwheat flour
2 tsp baking soda
¾ cup chopped almonds
Preheat oven to 350oF
Mash the bananas thoroughly and mix well with the honey, vanilla extract and olive oil
In a separate bowl, sift and mix flour & baking soda. Add the almonds.
Add the dry ingredients into the wet ones and mix. Make sure not to over mix or the bread will become tough.
Line the base of a non-stick loaf pan. Pour in the batter, flatten out the top and bake for 45-60min or until a knife inserted in the centre comes out clean. Remove from oven, let cool slightly and remove from pan. Let the loaf cool on a rack.
Tip: It freezes well so I usually double the recipe and make two loafs and freeze.
Gluten free flour have a tendency to stick to the loaf tin, so I recommend that you always use baking paper to save any disasters.
