[Scotty H]Favorite Saturday morning breakfast..

Scotty H has posted a new item, 'Favorite Saturday morning breakfast..'


 

These little gems will help you get out of bed on a Saturday morning.. They only take a few minutes to make, fool proof even in a sleep deprived state and are  sure to become an instant favourite! They are light and fluffy in the texture and provide lots of protein and energy for a long day ahead. Serve them with yoghurt, maple syrup and a fruit salad. Make sure not to be gentle with the batter and not over-mix it as this will make them tough. Enjoy..

 
6 pancakes – 2 servings
¾ cup light soy milk
¾ cup rolled oats
1 egg
½ tsp salt
1 tbs honey
½ cup gluten free baking mix  (2 parts rice, 1 part soy flour, 1 part tapioca)
2 tsp baking powder (gluten free)
Mix soymilk, oats and egg together and beat until just mixed. Add salt and honey.
In a separate bowl, sift the flour mix and baking powder. Add the dry ingredients to the batter and mix. Make sure not to over mix as this will make the pancakes tough.
Lightly coat a non-stick fry pan with light olive or avocado oil spray and drop in a spoonful of batter per pancake. Fry on medium heat until the top of the pancakes start to set, flip them over and fry for another 30 seconds or until done.
